Roasting Coffee Science
This course sets the standard for both beginners and industry roasting professionals. You will learn the physical and chemical reactions that occur during roasting, design overall roast profiles based on these principles, and apply them in practice. Beyond theory, you’ll measure roast changes using standardized techniques and analyze flavor development.
Today’s roasters must leverage vast data to standardize roast profiles objectively. To achieve the finest coffee, they need to master the green bean’s origin, variety, processing, flavor and aroma. They must also create new taste experiences through blending, design a balanced body, and refine quality through rigorous evaluation.

Develop a deep understanding of coffee characteristics and roasting, and learn to communicate them effectively to customers.
Grow into a professional roaster with the intuition and extensive experience to make the right calls in any situation.
Before roasting, a roaster must know exactly which green beans they’re using; the deeper your knowledge of green beans?the raw material of coffee?the better your results. Bean variety impacts quality, as different varieties reveal flavor differences more clearly. Higher-altitude, cooler growing regions produce beans with greater density and superior quality due to larger day-to-night temperature swings.
The processing method critically shapes flavor: washed coffees feature bright acidity, lighter body, and delicate, refined aromas, while natural-processed beans offer lower acidity, fuller body, and sweet aromatics. When profiling a roast, these bean variables are essential considerations.
Roasting provides the framework for a coffee’s flavor potential to unfold, guiding the creation of a unique coffee profile?part science, part art.
- ROASTING PROCESS -
Blending reshapes aroma, flavor, and texture to create a distinctive profile. Maintaining balance and consistent quality is key. A great blend harmonizes taste, aroma, and mouthfeel?smoothing bitterness, enhancing sweetness and acidity, and bringing out the coffee’s character.
The goal of QC is to maintain and improve coffee quality through evaluation methods. There are sensory and physical assessments. Sensory evaluation uses the senses to judge aroma, flavor, texture, and other organoleptic properties of the coffee.
